    Is it possible to see what specific forums and threads an individual user has subscribed to?

    Not if they are auto subscribed. However, you can see your manual subscription (forums only) under your My Settings tab. I remember there was a tab to see the threads one was tracking but I don't see it now. I don't know when we lost it.
    I am using the latest AS/AF/DNN available.
