I followed the upgrade steps but when I clicked "Upgrade" in the AF control panel it timeout on the line - GrantStoredProceduresPermissions cursor.

I check everything and it all seems to work though. Upgrading on the test clone site worked fine.

Should I be worried? Anything I need to check to make sure the upgrade worked? Was there anything critical after this step?

Odd that you received that error in the control panel. We don't use GrantStoredProceduresPermissions at all. That's a core thing that has been causing all the upgrade errors. Create a support ticket and we can get you the scripts to run manually just to make sure.
